Then how can Fiddle activate one and not interrupt his ult(I have seen this happen and done it myself)? A glitch maybe?

Fiddle's ult is channeled during the charging part of the spell but once you're done channeling and the Crowstorm is unleashed, you're free to use other moves, walk around, etc, just like Kennen's ult (which is why Hourglass and their ultimates are so good together). Shen on the other hand cannot do anything while ulting, meaning that Hourglass will break his channel (if he can even activate Hourglass during it).
Twisted Fate, for example, can use Hourglass during his Destiny teleport, because he can do other things as well such as picking a card.

Exactly. If you were to use Zhonya's during Malzahar's or Warwick's ults you'd come to the same conclusion: the channel will be inturrupted.
