Some say the lane is hard but I think its fun, I don't think ignite is needed, try to E his passive auto if he has it and use your Q on minions to avoid his W pull if possible.
Dr. Mundo
Lane is fine but he scales pretty well, don't know much about the matchup tbh just go sunderer every game vs him.
Akali
Akali favored IMO, grasp is good vs her since you won't get to stack lethal tempo. Try to get push lvl 1 and make sure to E her passive auto since you can't block any of her other damage.
Akshan
Definitely Jax favored, your E is op against him and you hard outscale him 1v1. Respect the fact that he's ranged and don't get low first levels vs him. Your ult is a lot better than his 1v1 so use that.
Camille
Jax favoured, you can cancel her E if you time it right. Avoid trading into her passive early, mid game it doesn't matter as long as you E her Q2 since that's where 90% of her damage comes from.
Cassiopeia
Mercs are overrated vs her I think since the only actual CC she has is her ult (Still go mercs if good vs her team). I'd recommend wits end second if possible though since you need MR vs her. Lane is rough but try to avoid fighting her close to her turret since her ult and W are really strong vs you in trades where you can't run.
Darius
Avoid Q'ing if he has E up. You can get push level 1, be careful with your E since if you mess up he can easily ghost and run you down.
Cho'Gath
Lane is heavily Jax favored since he can't really do much against you early unless you mess up. Take your trades while considering that his sustain is really good, late game you can't kill him and he can't kill you kinda. Black cleaver recommended here if you need it
Fiora
Love this matchup, the Jax E vs fiora W mindgame usually decides who wins but you shouldn't really flip fights where you lose if she manages to flip the W timing. Play around your ult proc after lvl 6, be careful lvl 1 if she goes grasp and pokes with her Q. If she goes grasp you're stronger in all ins later so respect her early and fight when you know that you win.
Gangplank
Matchup is fine, try to bait out his barrels and block his passive auto with your E. Trade around your ult passive after lvl 6, lvl 6 is a huge spike since his ult is much weaker than yours in the 1v1.
Garen
Rough lane, E his Q and try to avoid his E when trading. You win lvl 1 almost every time, I'd recommend ignite since winning lane is really important vs garen. Your spike is much bigger at 700 gold than his, 1,1k gold favours him though.
Gnar
Matchup is fine, dshield always. Grasp recommended aswell, his rage form is strong but when he's small you can win most short trades by just Q -> AA -> W with ult proc.
Gragas
gragas favored imo, gragas is a bit weaker now though so mercs rush with dshield and you should be fine. grasp recommended. Never Q on him, try to get your ult proc + W on him without Q'ing on him. always better when wave is on your side.
Gwen
Matchup is probably even in the higher ranks but in my experience this matchup is nothing but good for Jax, lethal tempo always and dblade/dshield both work, I'd go dblade though. Her lvl 6 is scary but with experience you'll learn when you can jump on her. As always, trade with your ult passive proc and try to avoid fights where she can dodge your E then all in you.
Illaoi
just dodge E man **** this champ.
Get push early, you win pre 6 and after that its a bit weird idk, just dodge E.
Irelia
nice lane, dblade lethal tempo, ignite in lower ranks. You win at every stage as long as you're not behind and both of you play well. Don't engage too hard with your E though since she could punish you by dashing on a bunch of minions and all inning with her ult. Her BORK spike is massive so be careful, if she gets bork before your mythic she wins that fight.
Jayce
In lower elos the matchup is fine since Jayce is a hard champ. In higher ranks its ban worthy from what I've heard though. Be aware that he can E you away in melee form so don't jump on him with E. Dshield always, try grasp too since you can Q -> Grasp proc on him to survive the lane. Second wind too ofc :D
K'Sante
Matchup is fine as far as I'm concerned, bit boring though since it can feel like a simulator where you're just dodging his Q's. Dshield good vs ksante but I still go lethal tempo, TP recommended. Hard to kill him unless he ints so play for sunderer spike and get your kills later on, in lane focus on CS.
Kayle
Not only are you just stronger than her but your champ counters her since you can both jump on her (0 mobility ranged champ) but also dodge her only source of damage. The matchup is still loseable though so don't int, I'm a big fan of second wave crashing and freezing the wave to punish her, ganks are op here but you can't rely on that. I'd recommend TP since you don't really need ignite to kill her.
Kennen
hate this creature, grasp dshield and just try to survive, I can't visualize a Jax killing Kennen but if kennen is bad it might be possible. Mercs rush is probably a good idea here.
Kled
If you know what kled does its pretty easy to play the lane, respect the fact that his passive can give him half of his hp back and play for trades where you E his W auto's then back off. Sunderer is a huge spike since it fits perfectly with the way you want to trade vs kled, all ins work but you need to set it up before by prepping waves, cooldown advantage and ult.
Lee Sin
Pretty sure this matchup is free for Jax, I haven't played it too much so I can't really give tips on how to play it but if you fall behind in lane you should be able to just play for your sunderer spike.
Malphite
Grasp and just spamming W on him when he walks up for CS makes the lane pretty decent, just make sure to play around your grasp proc and not waste mana on Q/E too much. Black Cleaver second instead of Shojin.
Mordekaiser
Jax is great vs morde, you get push lvl 1 always, try to avoid his Q by either dodging or standing on a minion so it doesn't get the bonus isolation damage. If he E->Q's you, you can E and trade back since he won't proc his passive while you're in your E. Try to ult after he does if possible since his ult takes your resists.
Nasus
The lane is obviously Jax favored, however if you mess up nasus might be able to outdo you sidelane in my experience. Sunderer is really OP vs nasus, play to punish him by using the wave against him and then transition into beating the enemy team in fights when you're 2-3 items.
Olaf
I usually go flash+ignite vs Olaf, with lethal tempo + ignite you can usually win level 1 unless he really outspaces you with his Q's. Respect his all in if the wave is on his side, the lane is jax favored and you also outscale him pretty hard.
Ornn
I like this lane, I like to go grasp here and just play to W him and scale to sunderer, don't let him proc his brittle on you, if he ults you can try to dodge it with your Q jump on a minion/ward.
Pantheon
Be aware of his Q damage, especially when you're low or he has 5 stacks, he stomps you in short trades if you let him decide how the trade goes, make sure to save hp until you're comfortable with all-inning him.
Poppy
I honestly don't mind the lane, i've heard its really **** though, Grasp and W'ïng her is kinda op, sunderer great vs her too. Might move poppy to Major/Extreme if I face her again and struggle, for now I think it's decent though.
Quinn
Renekton
Very common matchup, I usually go Ignite+Lethal tempo since I'm confident and I find it to be more enjoyable, Grasp+Dshield is fine though since you can win pretty short trades with your E aswell. You're happy with going even and scaling for Sunderer but you can kill him in lane too, don't play too safe.
Riven
Lane is fine, pre 6 its a little bit riven favoured but you can definitely still win, after 6 your ult passive + W + Sheen works wonders vs her. After sunderer you can trade really comfortably vs her as your usual trading pattern will sometimes even heal you depending on how much damage you take.
Rumble
One of the champs that I hate, I can't really say a lot about is as I myself don't even know how to win it, I do think lethal tempo and unflinching+second wind secondary is fine though since you're playing to all in him.
Sett
Slightly Jax favored IMO, you can fight for level 1 prio as long as you don't get kited by his E when you use your E, sunderer spike is massive vs sett since you can just W him on repeat, you're "fine" with going even but I'd recommend limit testing this lane seeing as Jax has the ability to stomp Sett if you're better.
Shen
People say that the matchup is Shen favored but I really don't see it, you get prio level 1 almost everytime if you trade on him with E and get your amplified E damage on him+wave, Shen's usual trade pattern vs Jax is E'ing away when you use E but he shouldn't kill you by doing it, if you want to go grasp that's completely fine since you can just W him and sustain through the trades, I go lethal tempo though and just fight him since Shen will often step up without cooldowns and die to you, his level 6 is useless in lane while yours is OP and sunderer is REALLY OP vs him.
Singed
I dislike the champion, don't chase him while he's proxying honestly just farm, I'd consider swifties after your sunderer since shen players like to go rylai's and just be annoying, he can just E you when you Q on him which is annoying but your scaling is fine, just try to avoid getting frustrated and dying to him because of that.
Sion
Definitely Jax favored in lane, Sunderer is OP vs him, zone him from cs when slowpushing, get level 1 prio, avoid getting hit by his Q's because you wan a caster minion, you can trade on him by just jumping on him then avoiding his Q, your E damage is op vs sion early game.
Tahm Kench
I haven't played this matchup in so long but I used to just stand behind minions and playing for my sunderer spike since that item is made for countering tahm, standing behind your minions waiting for him to step up for a last hit then auto->W is fine when trading vs him.
Teemo
I think the early laning phase can go either way, I usually go grasp+secondwind+dshield with MR shard. Merc treads are really good vs teemo since his blind is OP and he deals AP damage, play for level 6 since your ult is significantly stronger than his in a 1v1. Either all in or walk away the second he blinds you, don't hesitate.
You outscale.
Trundle
Ulting before his ult is usually bad since he takes your resists. The longer the trade the worse, in short trades you can dodge all his damage then walk away. I'm a big fan of ignite vs trundle since winning the 1v1 is so important, macro is important midgame since he might just splitpush and end the game.
Tryndamere
The early laning phase isn't really jax favored but you outscale extremely hard. Sheen is op since you can kinda W him on repeat, the only way you die is by messing up your E and letting him all in with his ult so be careful, I go lethal tempo every game vs trynd.
Urgot
No idea how to play the lane since I never play against Urgot. Keep in mind that you're fine with going even until your mythic and try to avoid getting hit by his E after using yours at all costs, I usually jump away after stunning him if he has his flip up.
Warwick
Love this lane, the warwick 1hp cheese doesn't work as well vs Jax since you can avoid his damage which stops his absurd healing when he's low. Play for short trades with W (passive ult+sheen proc if you're at that stage) until he's low enough to all in, if you're getting ganked and warwick uses his ult you can try to E before it hits, he'll get stunned in the middle of his ult or at the end depending on when you use your counterstrike and then you can walk away, pretty sure it dodges the damage from his ult too so that's cool :)
Yone
Recent Yone buffs have made the matchup kinda weird, I still love playing the lane since yone players usually fight a lot. His W shield is insane so try to avoid it in trades, yone will almost always E away to kite your counterstrike if you jump on him with E activated so avoid doing that. Short trades with W+ult proc+sheen is op as usual.
Yorick
No idea how this lane goes, no one plays yorick. If you struggle with yorick you're probably better off just watching a vod of someone that's actually good playing it
Been playing since Season 11 and been playing Jax for most of that time. I got masters season 13.I'm not the best at the game but I think I'm pretty good at Jax as a champion specifically as I've played him a lot. I live in Sweden... yeah thats about it.

Why you should play Jax
Jax is an extremely strong, all rounded bruiser that is almost always good in the meta. He is popular in both pro play and solo queue due to his strong laning phase+scaling, he can also be used for both teamfighting and splitpushing which is somewhat rare.
I find him extremely fun which is why I play him, I love the fact that he is simple by design but has some small intricacies which make him rewarding to master, he is in very few games unplayable since he has tools to help him navigate even champions that are supposed to counter him. He is therefore a viable blind pick since almost all of his matchups are winnable as long as you're better.
Jax is also extremely versatile when it comes to itemization/runes which is a big reason as to why he's so good into almost every team comp, he can build whatever and still be fine, you could even go AP Jax if you're Thebausffs but I wouldn't recommend it. Jax can also go grasp into matchups where he won't get to auto attack too much.
some comments on runes (grasp vs lethal tempo)
Lethal tempo is really good in lanes where you would get to auto attack them a lot in a trade/all in, lets say Camille or Illaoi. An example of a lane where I wouldn't go lethal tempo could be something like K'Sante where the trades are usually extremely short and even in case of an all in he kites you with his Q so the attack speed doesn't give you that much value, vs K'Sante I would much rather go grasp and play to W him on repeat since those are the trades I can win/play around.
Items
Sunderer
Most of the rough lanes I recommend playing for your sunderer spike since it completely changes how you can trade and using it properly kinda makes you impossible to trade onto depending on the champ, the item will be removed when Season 14 comes out so I'll have to see if the W spam still works into stuff like Tahm Kench without Sunderer.
Second item
Shojin is another item that is extremely good, especially on Jax. You a lot of ability haste, AD and HP which are all great stats on every bruiser including Jax, I build Spear of Shojin as my second item 90% of games and you should too, the other options being Black Cleaver vs armor stackers since it gives similar base stats and movespeed from the passive, difference being that black cleaver has armor shred, vs full AD/AP frozen heart/wit's end are great options to consider, when learning the champ I'd stick to shojin/black cleaver though.
Third item
After sunderer -> shojin/black cleaver I almost always go zhonya's 3rd, however if you've built something like wit's end or frozen heart you can go shojin/black cleaver since the items are just too good on Jax.
Fourth item-Sixth item
Assuming that you already have stuff like Sunderer, Shojin/Black cleaver and Zhonya's the options that I consider good late game are stuff like Steraks gage, Abyssal mask, Wit's end, Guardian Angel, Gargoyle's stoneplate and Frozen heart depending on the game state and team comps.
