Regarding your Question:
In my humble Understanding, Triforce Builds are always riskier. They scale better - yes - but if you fall behind, coming back - unless you can Split for ages and take towers - is hard. You will be pretty useless in TF, running in with only Triforce while the enemies have 2.5 Items each.

So I would opt for Stridebreaker in most Games, Goredrinker in hard Dueling Situations (Olaf).

Stride gives you Utility for Engage / Disengage, decent Damage and Mobility. You can work with your Teammmates to get Shutdowns etc.
Gore gives you Sustain with Omnivamp and Conqueror. Skip my Mobility Setup for Gore with PR for now. It is rather experimental...
I would not experiment too much at that stage (yes I know, my Guides are kind of inviting to do so :) )

Go the standard Stridebreaker Build here. Take PR full Mobility Page against highly Mobile, Squishy Teams, Conqueror with Sorcery against mixed Teams for [L] and [J], Conqueror with Resolve for [L] against Poke Lane / Teams. In lane Start D-Shield vs. Ranged, D-Blade vs. Melee. Red Smite vs. Melee / Burst Teams, Blue Smite vs. Ranged / Mobile Teams.

Against heavy Dueling Matchups in Top Lane like Olaf, Trundle, Fiora or high Sustain Champs like Aatrox go Goredrinker with my Dueling Build Setup. Start with D-Blade.
Take Conqueror for shorter Trades - e.g. against Aatrox who goes in and out in the beginning - you will get more Value out of the 1-2 Stacks and Autos you can Apply.
Take Lethal Tempo for heavy AA Trading.
Get Executioner's early for more AD and Anti-Heal against these Champs into Steelcaps into Gore.
