you have to take advantege on specific lanes.
otherwise, only a bruiser comp seems to beat a bruiser comp, and that's one of the things that i don't think are balanced in this game.
example1: deny early
Pantheon domination (safe laner), harass
Kha'Zix early and plenty, physical laner vs
Galio.
nice name, btw... <.<
also, picking
Rammus implies your laner can guarantee a kill when he ganks. otherwise, it's a waste of a pick, since he needs some items to work out. If you want to keep a fairly standard "protect the adc" team, junglers like
Amumu and
Sejuani work better.

*This will be a long post*
Just provide a front line for your ADC and you will win the game. Kiting also helps.
Comps like that are very gimmicky, and easy to counter.
The main thing you have to understand about bruiser champions is that they usually have very high base stats without building damage, and can afford to build HP while still doing some damage. However, this means that there are generally two build options for bruisers in a generic game.
1) Build tanky for sustain damage team fights.
2) Build damage.
Problem with building damage on a bruiser is that very few of them can actually burst down a target with that damage. For example, Nocturne with damage is very gimmicky because he only has really 1 AD scaling ability in his kit. Sure, his ult scales with AD, but he can't spam it so we take it out of the equation. With this said, if you build Noc (a typical bruiser) with AD, he will be doing a lot of damage in the form of auto attacks, but he has no burst potential.
With this said, he will just die faster. This is the main reason bruisers build tanky: they do more damage in the long run with HP and resistances than if they build out right damage.
SO, the way you counter this is with Burst damage.
Remember, in general Burst damage (AP carry/AD Caster) beats sustain damage(AD/AP Bruiser) because you can deal a higher amount of DPS than the bruisers can. Some people might argue that the bruiser comp will just live through the burst, and this is true, but they won't live for long if your team is providing cover for your burst champions. What happens is the initial burst wave doesn't kill all the bruisers, but the second one usually will.
The main reason gimmicky comps like this work is strictly based on team organization.

If they're building a bunch of health and no armor (which is most likely the case) as an AD you could build a
Blade of the Ruined King (after a good damage item such as
Infinity Edge, you still need to do damage first).
DPS Mages (sustained damage, not burst) or people that do damage based on max health are doing better in this meta since health is so strong right now.

Defend your AD carry.
Your AD carry kills all the bruisers.

Yeah it kinda sucks, but you will need to rely on your team to win teamfights. Breaking news :P Against bruisers, you'll usually want to have some person be a giant wall between the bruisers and the ADC, like
Cho'Gath, and sometimes
Singed.
Malphite and
Amumu work too, if they don't get banned.
Additionally, you way want to get a
Lulu support or something. I find her Q to be an effective slow, her shield and ult to be lifesavers, and her haste/polymorph to be useful no matter how many people your ADC is going against.
In my opinion, assassins are harder for an ADC to deal with, than bruisers are.

bruiser teams fall off lategame. Get alot of randuins omens and defend your carry.
usually an apcarry outscales a bruiser and endgame a bruisercomp wont be able to take turrets, so just turtle it out till your ad totally shreds them.
in laningphase you should gank the doublebruiser lane and kill them as often as possible because they are both melee and will often all-in the lane they are in.
wait for lategame and win, thats the key

(we already tried picking rammus as our jungler)
Do we have no choice but to go full bruiser too against these kinds of teams?
Team comps Examples:
Jarvan
Pantheon
Galio
Taric
Kha'zix
or
Jarvan
Garen
Talon
Pantheon
Malzahar
