Auto attack damage you said AP varus does like 740 dmg and CRIT, but it feels you are simply ignoring the fact that CRIT varus can go above 2.50 AS and that you can do dmg to multiple people with hurricane and after killing enemy champion you to like 4 AS so you are doing so much dmg and you can even hit multiple people with hurricane compared to AP varus it just feels like he's only good to killing one champion and you kind of need to land your R if you don't land it it's pretty bad, but CRIT varus you just need to Auto attack

You don't always need to hit your ultimate to deal damage as AP Varus, the most important thing is that you can fully stack your W's passive on an enemy which can also be done by auto attacking. Though Crit Varus is faster attacker, AP Varus usually has time to land 3xAA + E combo no matter who the enemy is and win the fight with that damage.
I hope that after this explanation you will try AP Varus but keep in mind that it was heavily nerfed in patch 13.13.
