well i kinda messed up :P those listed are good 1v2 players to fight. For lane holding i would go with any tank tbh...
Malphite/Morde/Maokai/Shen
Good for solo lane is Blitzcrank or Mundo.
Had some nice results as nocturne as well.
From ranged 1v2 laners i would pick Caitlyn

I'd say Galio holds himself quite well, considering he can escape if need be, and has nice AoE harass with Q and E. If Tower dived, he has W and his ult to make them think twice.
My friend loves to Blitzcrank or Malphite whilst I jungle, and I've been against Anivia in a 2v1, who proceeded to double kill our lane at lv6 :3.

I was Kat once with Xin friend...2v5. We were both at half health and entire enemy team was almost full health. Took less than four seconds to waste their entire team.
As far as laning goes, almost any champion can 1v2. You must (NEED) to play it right and be good with the champion to do so. I have 1v2 laned with Kat, Eve, Karma, a couple others.
Now, for 1v2 in a fight, pretty much what DEWO said. Basically any AD carry (bruiser, off-tank/dps) can handle any two people. I have 1v3 with Amumu and Rammus on TT easy.
